Career change - what is the best program for my case?

Hello,
I'm a Mathematics teacher with a B.SC in Math. and I worked for 5 years teaching Math for middle/secondary students. I'm looking for a career change in IT since I do a strong IT background in PC maintenance/troubleshooting and Networking that is equivalent to the A+ level and the ICND1. I have a passion towards the MCITP for server 2008 from Microsoft and I beleive I can do it on my own but what worries me that employers will see my resume as a Math. teacher with a B.SC in Mathematics and not a computer science for example so MCITP alone may not sound enough for them so I'm asking:

What is the best program in any university in USA (preferably Los Angeles or California since I may have some easiness in accomodation from some friends) OR Australia that can allow me to be officially recognized in that field?

The point is that I'm serious about this career change and I want to do it as fast as I can possibly can to get the official recoginition in whatever country I'm going to do this study in.
