I currently have
a WS-C3750G-12S

Layer 3 switch

all fiber ports.

each port is inner connecting different subnets for different departments

on each subnet we have both voice\ data traffic on the same subnet.

I wanted to implement a subinterface to a port on this layer 3 switch but isnt allowing me.
not sure if its cause its not supported

I would implement VLANs but we dont have a set of standardized switches.that have management capabilities

any feedback would be much appreiated

in order to use sub-interface on catalyst you'll need to make the port router (not SVI). you can do that by doing something like
int gi 0/1
no swi
enc dot
int gi0/1.2
enc dot vlan 2
int gi0/1.3
enc dot vlan 3

but somehow I have feeling it is not what you want. why don't you just do vlan prunning on normal trunk ports?
